GREEK SALAD WITH FETA

    4 servings

    Salad
    1 package Mt VikosⓇ Organic Feta

    4 medium tomatoes, diced

    1 medium cucumber, sliced in cubes

    ½ small red onion, sliced

    1 small green or yellow bell pepper, chopped

    ¾ cup kalamata olives, sliced

    1 avocado, diced

    Dressing
    6 tbsp. extra virgin olive oil

    1 ½ tbsp. fresh lemon juice

    1 tbsp. red wine vinegar

    1 ½ tbsp. of minced garlic (around 1 large clove)

    1 ½ tbsp. minced fresh parsley

    1 tsp. dried oregano

    ¾ tsp. of honey

    salt & pepper to taste

     

    1. Mix all the dressing ingredients and add salt and pepper to taste.
    2. Add tomatoes, cucumbers, onion, peppers, olives, avocado and feta to a salad bowl.
    3. Drizzle dressing on top of the salad and gently toss to coat evenly.
