
BEET HUMMUS CROSTINI WITH HALLOUMI

Salad
1 package Mt VikosⓇ Halloumi1 can (15oz) chickpeas, rinsed and drained
1 beet, cooked
¼ cup extra virign olive oil
3 tbsp. of fresh mint
2 cloves of garlic
1 tbsp. of lemon juice
¾ tsp. ground cumin
Salt to taste
Sliced bread, toasted
- Put the chickpeas, beet, olive oil, mint, garlic, lemon juice, ground cumin and salt in a food processor and blend until smooth.
- Slice Halloumi into ¼” thick pieces. Place on grill or frying pan with extra virigin oil, enough to lightly coat pan, and grill until golden brown.
- Top sliced bread with beet humus and finish it with the grilled halloumi, fresh mint and olive olive.
