BEET HUMMUS CROSTINI WITH HALLOUMI

    4 servings

    Salad
    1 package Mt VikosⓇ Halloumi 

    1 can (15oz) chickpeas, rinsed and drained

    1 beet, cooked

    ¼ cup extra virign olive oil

    3 tbsp. of fresh mint

    2 cloves of garlic

    1 tbsp.  of lemon juice

    ¾ tsp. ground cumin

    Salt to taste

    Sliced bread, toasted

     

    1. Put the chickpeas, beet, olive oil, mint, garlic, lemon juice, ground cumin and salt in a food processor and blend until smooth.
    2. Slice Halloumi into ¼” thick pieces. Place on grill or frying pan with extra virigin oil, enough to lightly coat pan, and grill until golden brown.
    3. Top sliced bread with beet humus and finish it with the grilled halloumi, fresh mint and olive olive.
