Grilled Lamb Burgers with Kasseri

4 servings

1 pound ground lamb

½ medium red onion, grated

2 tablespoons minced parsley

2 tablespoons minced mint

2 garlic cloves, minced

½ teaspoon dried oregano

½ teaspoon fine sea salt

½ teaspoon black pepper

1 package (6 ounces) Mt Vikos Kasseri

4 hamburger buns, toasted ** Do you mind if we use thick cut ciabatta loaf grilled instead?

2 cups arugula

1 ripe tomato, thinly sliced

½ medium cucumber, thinly sliced

1 small red onion, very thinly sliced

  1. In a medium bowl mix lamb, onion, parsley, mint, garlic, oregano, salt, and pepper with your hands until combined. Do not overmix. Divide into 4 and shape into patties. Set aside.
  2. Place a grill pan over medium heat or prepare a hot grill fire. Cook or grill burgers to desired degree of doneness, flipping once to brown both sides. For last 2 minutes of cooking, place cheese on top of burgers and cook until melted.
  3. Place bottoms of burger buns on a work surface and divide arugula between them. Top with burgers, then tomato, cucumber, and onion. Top with bun tops.
