Mt. Vikos Halloumi
Halloumi is the traditional cheese from Cyprus,
and due to the way it is made, it is one of the only cheeses
in the world that does not melt when heated.
Mt Vikos Halloumi is made in a small dairy in
Pafos, Cyprus in a classic traditional manner using only fresh
sheep and goat's milk. The cheese is made in small batches.
The curds are hand-filled into individual molds and turned
by hand. After an initial cooking, each cheese is hand-folded
into a half-moon shape after a sprinkling of local mint is
added.
Mt Vikos Halloumi is versatile. It is often
served as part of a Greek meze with olives, fresh vegetables,
and crusty bread. Cut the Halloumi into quarter to half inch slices,
fry in a small amount of butter, until golden on each side
and serve with eggs and toast for a Cypriot-style breakfast.
You can also cube Mt Vikos Halloumi, place on skewers, and
grill until golden on all sides. Serve with fresh pita or
crusty bread and garden tomatoes.
